Traditional cuisine in Caorle

A handful of eateries where you can sample the local flavors

Traditional Caprulan specialties

Self-entitled a “town of the sea” (citta di mare), it comes as no surprise fishery has always been the core of Caorle’s economical life. It’s not just the casoni that remind us of the ancient traditions of the place, but the resort’s cuisine too. If you truly want to get to know Caorle, you must sample some of its specialties, most of which are seafood and fish-based dishes of peasant origin.

In spite of its rustic character – or, perhaps, precisely due to it – the Caprulan cuisine has become known in the entire province of Venice. Nothing too complicated, nothing too inventive: it keeps true to the simplicity of its ingredients. The gifts of rivers, of the lagoon and of the sea, turned into mouthwatering plates: the spirit of the local cuisine that you can experience if you want to widen your gastronomic horizon.

The tasty broeto caorlotto is a sort of soup still made after the old recipes of the fishermen. This fish soup is eaten with polenta: highly recommended if you count on full satisfaction. Complement this first dish with the hearty sardee in saor, marinated sardines: the fresh catch is first fried and then immersed in a dip made of oil, fried onions and vinegar, abundantly salted.

Also evoking the old meals of the fishermen there is the so-called bisato al speo, skewered roasted eel prepared with no wandering from the ancient recipe. Local cuisine also uses octopus (moscardino), clams, crab, squid, mullets, shrimps, cuttlefish, scallop, sole fish. The fresh seafood usually graces pasta or rice plates: check out the so-called riso ai frutti del mare (rice with sea food) or riso con il nero di seppia (rice with squid), or any combo of the above.

Wine tradition

Wash down your meals with some of the best wines produced in the region. Fortunately, Caorle is surrounded by prestigious vineyards, e.g. Basso Piave and Lison-Pramaggiore. Each year, producers press the precious liquor from Cabernet Franc, Cabernet Sauvignon, Raboso, Pinot noir, Pinot grigio, Merlot, Tocai, Verduzzo and Chardonnay. Excellent vintages are given off by local grapes: Malbech, the so-called Refosco dal peduncolo rosso and Verduzzo dolce.

If you’re at a loss when it comes to associating food and wine, rest assured: if you dine out, most restaurants’ staffs have great command of gastro-enological culture, so they know what to recommend.
